The Craft

Belgian chocolate, tempered by hand

Every HRS piece starts with Belgian couverture chocolate, melted, tempered, and molded by hand in small batches. Tempering is what gives each piece its glossy finish and clean snap, and the rest of the luxury lives in the flavor pairings and the finishing.

Behind the scenes, a from‑scratch dark chocolate is being developed for a future Origins collection, aimed for Valentine’s Day 2027.

115–120°F

Chocolate is melted fully, breaking down existing cocoa butter crystals.

80–82°F

Cooled to seed stable crystal structure — the step that gives chocolate its snap.

88–90°F

Gently rewarmed to working temperature, ready to mold and finish.

Temperatures shown for dark chocolate. Milk and white chocolate temper a few degrees lower.
